The "GOOD" Fats

FISH OIL

Omega-3 fish oils are beneficial, in part, because they seem to reduce some of the damage of Omega-6 vegetable oils. The beneficial Omega-3 fractions in fish oil are eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA). Flax seed contains oil, called "alpha-linolenic acid", which has similar properties to fish oil, but with somewhat reduced activity. Both fish oil and flax seed oil are extremely fragile, like most unsaturated fats: they become rancid, or otherwise damaged (and toxic), within minutes outside of the refrigerator or when exposed to light. They must be stored and consumed with antioxidants (see below), including tocopherols, tocotrienols, polyphenols and other aromatic spice oils. Consumption with dairy protein can also protect these fragile oils from damage during digestion.

Other Good Oils

If you must fry, bake or sauté with oil then do it with extra virgin coconut oil. This oil is composed of medium chain saturated fats, also called medium chain triglycerides (MCT's), such as lauric acid, which has anti-viral properties, boosts HDL, and does not become rancid or damaged easily. Oil for light sautéing and salad dressings, etc. can include extra virgin olive oil, rice bran oil, canola oil , toasted sesame oil (the brown kind), avocado oil and macadamia nut oil. I recommend mixing and matching these oils as need, according to taste. Rice bran oil contains natural tocotrienols, and can be mixed with any oil to prolong it's shelf-life. Toasted sesame oil contains sesamin and sesamol, lignans which are strong antioxidants and also boost the levels of gamma-tocopherol in the body. Use a small amount in Asian salads and meals. Avocado oil and macadamia oil are highest in monounsaturated fats. Macadamia oil has the highest smoke-point of any liquid vegetable oil tested. Store all unsaturated oils, which become rancid and damaged quickly, in a cool, dark place, buy only quantities you plan to finish within a month or store these oils in the refrigerator.
